NOTES:

Pectin* = "citrus pectin,monocalcium phosphate"
Most fruit/berries naturally contain pectin which is the element that allows "jelling" when processed. This "natural" content is normally inadequate to produce a desired result.

The normal "commercial" process used, to overcome this dilemma, adds loads of sugar (which is much cheaper than pectin) in their process, which lessens the natural flavors.

We add a citrus pectin which is derived from the peels/skins of fruit.
If necessary, monocalcium phosphate (non chemical natural calcium) is added to achieve "setting/jelling".
The end result being it requires much less sugar to achieve "jelling", therefore leaving the "natural" flavors intact.
